Right to Work & Eligibility Checks for Apprentices

Would be grateful for info on how others tackle eligibility checks for non-UK nationals and/or less than 3 years of residency. 

Currently, we ask employers to confirm that they have conducted right-to-work checks, and then we conduct funding/residency eligibility checks and obtain immigration status proofs, usually via the 'view and prove your immigration service' (where we ask applicants to choose 'other' and 'Right to Study', as that enables us to get the share code to see full immigration status/type details, whereas the Right to Work' opinion just gives us a yes or no). 

We check & retain copies of passports & visa vignettes etc to prove eligibility where the applicant does not have a UKVI account.

....my question is do we need to have sight of the employer's right to work check too, or is it sufficient for us to just ask the employer to confirm they have conducted this?
