We have a potential apprentice who wants to do a business admin level 3, however she already has achieved a degree in Psychology. Am I correct in thinking she will be eligible for the apprenticeship as it is not in the same field as her degree? Please advise.

Correct, no restriction on graduates doing Apprenticeships in unrelated areas (even in related areas, you'd do a skills scan to see what the actual overlap was).
