We've had this issue. If it's the kind of apprenticeship where there are weekly lessons, and they're going to miss out and struggle to catch up if they have to stop attending, we might let them continue to attend. The important thing is though, that you cannot count any of that delivery done during the Break as off the job hours. There will have to be additional OTJ planned once they restart to replace what should have been lessons.
Also, consider what you'd do if they never find a new employer. Have you wasted their time letting them attend? We've sometimes been able to switch them to a classroom based delivery model to complete the main qualification in that situation. If they're not doing any quals, and it's just the Standard, they'd have attended for nothing really. Just be really clear with the apprentice what the situation is in any case so they can make an informed choice.

Break in learning - change of employer
Edited
Hi could you advise -
When a learner is changing employers, we have 30 days, they are still classed as in learning, after which they go on a break in learning for up to 8 weeks.
My question is during the 8 weeks are they allowed to attend college?
