Can an entry of off the job be use as the last day of learning?
I have seen instances where there was an entry for off the job after the last session with Assessor or after their last evidence was uploaded.

Yes, but only if the recorded activity imparted new learning to the individual to help them achieve the required KSBs set out in the standard.
