Once the academic teaching is complete, what is the minimum amount of hours apprentices should complete (over the summer months) to ensure compliance and no pauses on the ILR for inactivity over 4 weeks.

How do providers manage this?

Are these term time only staff? If so, does this answer it;

P47.2.1 For those apprentices with a term-time only contract, if there is no planned activity over the 6 week summer holiday we do not require a break in learning. This is the only exception to the active learning / break in learning rules. 

If they're not term time only, they should be doing OTJ in the workplace over the summer. OTJ is all sorts more than classroom activity. There's no hours minimum, as long as there isn't more than a 4 week gap between each activity, and you can fulfill the required minimum OTJ for the whole apprenticeship.
